There are several stories about how brownies came to be. One popular tale credits a homemaker from Maine. She was making a chocolate cake and forgot to add baking powder. The cake did not rise, so she cut it into squares and served it anyway. Another widely accepted account comes from culinary history. According to The Nibble, the first printed brownie recipe appeared in 1906. It was published by Fannie Merritt Farmer, a well-known American cookbook author.

The recipe later evolved. Maria Willet Howard enriched the original version by adding extra eggs and more chocolate. This richer variation became known as the Bangor brownie.

Fudgy or Cake-Like?

Brownies come in two main textures. Some are dense and fudgy. Others are light and cake-like. Classic brownies use butter, sugar, chocolate, eggs, and flour. Fudgy brownies contain very little flour and no baking powder. The butter is melted rather than creamed, giving them a moist and dense texture.

Cake-like brownies use more flour and a small amount of baking powder. In this version, the butter is creamed with sugar. This process traps air and allows the brownie to rise, creating a lighter crumb. For those who prefer less sweetness, unsweetened chocolate works better than sweetened varieties. There are also brownies made without chocolate. These are called blondies and use brown sugar instead. The sugar gives them their golden colour and distinctive flavor.

Making brownies at home is simple and rewarding. You can prepare them from scratch or use a ready-made mix for convenience.
